食材準備:
- 大辣椒 100g
- 朝天椒 30g
- 沙拉油 150ml
- 蒜頭 50g
- 薑片 20g
- 花椒粒 15g
- 辣豆瓣 50g
- 辣椒粉 20g
- 醬油 100ml
- 高湯 2500ml
- 甘草 1片
- 冰糖 10g
- 青蒜 2根
- 鹽 適量
料理步驟:
1. 將辣椒去蒂後稍微拍打,讓味道容易出來
2. 起油鍋,爆香辣椒、蒜頭與薑片
3. 加入花椒粒、辣豆瓣、辣椒粉與醬油稍煮
4. 倒入高湯、甘草、冰糖和青蒜後,以適量鹽巴調味,再熬煮30分鐘
5. 濾渣後即可當湯底

- Chili Bean Sauce 50g
- Chili Powder 20g
- Soy Sauce 100ml
- Broth 2500ml
- Licorice 1pc
- Crystal Sugar 10g
- 2 Scallions
- Salt
Cooking Steps:
1. Cut off the stem of chili and beat. (To release the flavor.)
2. Heat oil in the pot, add chilies, garlic, and ginger, then sauté until fragrant.
3. Add the Sichuan peppercorn, chili bean sauce, chili powder, and soy sauce, another cook for few minutes.
4. Add broth, crystal sugar, and licorice, and then simmer for 30mins.
5. After strain the impurity , the spicy hot pot stock is ready.
6. Enjoy!
